Meet Colombia El Vergel EA Decaf, a meticulously crafted natural anaerobic coffee from Fresno, Tolima, delivering vibrant layers of passion fruit, strawberry, and tropical sweetness, balanced by cacao, honey, and a bright citrus finish.

The Process: Ripe Red and Yellow Caturra cherries undergo a 48–60 hour anaerobic fermentation to intensify complexity, followed by staged drying under a marquesina and low-temperature mechanical drying. After pre-stabilization to deepen flavor, the coffee is fully dried and rested for 45 days in GrainPro bags. The beans are then gently decaffeinated using sugarcane-derived ethyl acetate (EA), which removes caffeine while preserving the coffee’s vibrant fruit character and richness.
