Meet Guava Banana, a vibrant and expressive microlot from the renowned El Vergel Estate in Fresno, Tolima. Crafted by farmers Elías & Shady Bayter, this coffee showcases the precision and creativity behind modern anaerobic processing. Expect a juicy, layered cup with tropical sweetness, bright acidity, and deep fruit complexity.
The Process: Ripe Red and Yellow Caturra cherries are carefully hand-selected and undergo a 48–60 hour anaerobic fermentation, enhancing aromatic intensity and flavor depth. After fermentation, the coffee is sun-dried on raised beds inside a Marquesina until reaching about 30% moisture. It is then transferred to mechanical circular dryers at temperatures below 45°C, slowly reduced to 18–16% moisture. Following a pre-stabilization resting phase to intensify flavor development, the drying process is completed mechanically. The beans are finally stabilized for 45 days in GrainPro bags, ensuring consistency, clarity, and quality in every roast.
