The Process: Freshly harvested Pink Borbon cherries undergo a 48-hour pre-fermentation before being depulped and co-fermented with yeast and banana flavors. The beans ferment for five days in banana-infused mucilage, developing a creamy texture and enhanced sweetness. They are then sun pre-dried, mechanically dried for consistency, and stabilized for 30 days to fully integrate flavors and achieve a smooth, balanced cup.
